Adequate Chili

This is, in my opinion, an adequate chili. It is simple, comes together relatively quickly, and is the perfect food for a cold winter evening. I prefer to sub in chipotle chili powder for a spicier chili, but this recipe is kid-friendly as written.
Ingredients
Chili
- 2 lbs. ground beef
- 2 yellow onions, chopped
- 4 cloves garlic, minced
- 4 (15 oz) cans stewed tomatoes
- 1 (10 oz) can tomato sauce
- 2 tablespoons chili powder
- 2 teaspoons salt
- 2 teaspoons dried oregano
- 1 (15 oz) can kidney beans
Toppings
- Sour cream
- Scallions
- Cheddar cheese, shredded
- Red pepper flakes
Instructions
- Combine 2 lbs. ground beef, 2 chopped onions, and 4 cloves of minced garlic into a large stock pot over medium heat. Brown the ground beef for 10-12 minutes.
- Stir in 4 cans of stewed tomatoes and 1 can of tomato sauce. Add 2 tablespoons of chili powder, 2 teaspoons of kosher salt, and 2 teaspoons of dried oregano. Break up tomatoes to preference. Bring the mixture to boil. Reduce heat to simmer and simmer uncovered for about 45 minutes.
- Open the can of kidney beans and drain the juice. Pour beans into the chili and simmer for an additional 10 minutes.
