Adequate Chili

This is, in my opinion, an adequate chili. It is simple, comes together relatively quickly, and is the perfect food for a cold winter evening. I prefer to sub in chipotle chili powder for a spicier chili, but this recipe is kid-friendly as written.

  1. Combine 2 lbs. ground beef, 2 chopped onions, and 4 cloves of minced garlic into a large stock pot over medium heat. Brown the ground beef for 10-12 minutes.
  2. Stir in 4 cans of stewed tomatoes and 1 can of tomato sauce. Add 2 tablespoons of chili powder, 2 teaspoons of kosher salt, and 2 teaspoons of dried oregano. Break up tomatoes to preference. Bring the mixture to boil. Reduce heat to simmer and simmer uncovered for about 45 minutes.
  3. Open the can of kidney beans and drain the juice. Pour beans into the chili and simmer for an additional 10 minutes.
