Peanut Butter Blossoms

This is a holiday classic in my family. The secret to this recipe is briefly placing the cookies into the oven for a second bake to soften the chocolate. Once you enjoy these cookies, you will cringe when you get other people's version with hard chocolate.
Ingredients
Lasagna
- 1 and 1/2 cups of AP flour
- 1 and 1/2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 2/3 cup shortening
- 1/2 cup creamy peanut butter
- 1 cup firmly packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- Hershey's Kisses
Instructions
- Heat oven to 375ºF
- Mix dry ingredients into a medium mixing bowl. Blend shortening and peanut butter. Gradually add brown sugar. Add egg & vanilla.
- Add dry ingredients. Mix thoroughly. Shape dough into balls using a rounded teaspoonful for each. Roll balls in granulated sugar. Do not flatten. Place balls on cookie sheet and bake for 8 minutes.
- Remove cookies from oven and top each with a Hershey's kiss, pressing down slightly. Return to oven and bake an additional 2-5 minutes until golden brown.
